Bright ruby. Classic cabernet aromas of cassis, cherry, tobacco and licorice. Silky and suave on entry, then supple and sweet in the mid-palate, with a dark fruit character that's both ripe and fresh. Dark berry and bitter chocolate flavors linger on the smooth, gently sweet finish.

Winemaker Notes

The Cabernet fruit was harvested at optimum ripeness in the cool of the night to preserve delicate fruit flavour & inhibit wild yeast fermentation. After crushing / destemming & innoculation with a pure yeast culture, fermentation took place in static fermenters (with auto-irrigators) & vinimatics @ 24 - 268C. Post Primary ferment, the parcels were pressed & matured separately until blending.
