Tasting Notes

Color: Black, purple hue Nose: Blackcurrant, blackberry, spearmint, spice, earth. Palate: Incredibly soft yet a powerful complex depth of fruit flavors abound. Blackberries, blackcurrant, spice and earth with hints of spearmint and tobacco leaf. The palate has good length with lingering flavors.

Maybe not varietal in the classic leafy, herbal sense, this is full on, round and quite supple with some darker, ripe currant fruit etched nicely with a subtle cut of herb that says its Cabernet, but from a warmer region. All in all this is impressive for its scale and balance - slippery, supple and loaded with gorgeous fruit at its core, saying drink me now with abandon and joy.

Food Accompaniments

Rich meats: Duck, Veal, Game. By the glass.

In the super-ripe style of Craneford’s ’05 wines, although here the strength of the blackcurrant cabernet and associated tannins balance the sweetness.
89 pts Robert Parker, Jr. Wine Advocate #167
The deep ruby/purple-tinged, medium to full-bodied 2005 Cabernet Sauvignon Allyson Parsons exhibits pure black currant and blackberry fruit along with notions of damp earth, herbs, and spice. With excellent ripeness, decent acidity, and silky tannin, it should drink well for 10-12 years.

Winemaker Notes

All fruit tasted in the vineyard prior to picking. A small addition of acid added at the crusher. Wine pumped over only and a minimal amount of the pressings added back.
