Bright pink in colour with a full soft nose. The characters of the wine are a combination of spicy pepper from the region and lifted strawberry aromatics from the primary fruit characters. The palate is soft and rich with crisp clean acid. It is a dry style of rose which is not a reflection of the presence of red grape tannins, rather the lack of residual sugar. The wine has been made to drink as a young wine and should be consumed nicely chilled. |

Saignée (pronounced sanyay) is a French term that refers to the juice run-off from a red fermenter. This process actually concentrates the red wine made from the juice left behind in the fermenter. The juice run-off has typically been coloured by the skins in the fermenter and as such it is possible to make a rose style wine from this juice. This juice was run-off from 100 % Hunter Valley Shiraz grown on our 40 year old Cornerstone Vineyards at 0.8 tonne to the acre picked at full ripeness. After the juice is run-off it is then fermented and treated like a white wine using controlled cold fermentation temperatures. The wine has had no oak treatment and was bottled early to keep it fresh. |
